In a large bowl, combine the drained jackfruit with minced garlic, paprika, onion powder, black pepper, chili powder, cumin, and salt. Use your hands to shred the jackfruit, working the spices in until it resembles the texture of pulled pork. (5 minutes)

Heat olive oil in a large skillet over medium heat. Add the minced shallot and sauté until softened. (2-3 minutes). Add the seasoned jackfruit and cook, allowing it to caramelize slightly. (4-5 minutes). Pour in water, stirring to deglaze the pan and incorporate any flavorful bits stuck to the bottom.

Introduce orange juice, lime juice, minced chipotle pepper, maple syrup, dried oregano, and bay leaves. Season with salt and pepper to taste. Mix well and bring to a simmer, stirring occasionally and further breaking down the jackfruit as needed. (25 minutes). If excess liquid accumulates during cooking, drain it off to achieve a concentrated, flavorful filling. Taste and adjust seasoning as needed.

Serve the chili-lime jackfruit in warmed corn tortillas. Garnish with your favorite toppings, such as fresh cilantro, diced avocado, or a dollop of vegan sour cream.

For a spicier kick, add an extra chipotle pepper or a pinch of cayenne pepper.
If you can't find young green jackfruit packed in water, you can use jackfruit in brine, but be sure to rinse it thoroughly to remove excess salt.
To warm the tortillas, wrap them in a damp paper towel and microwave for 30 seconds, or heat them in a dry skillet over medium heat for a few seconds per side.
