Preheat a grill for medium-high heat. (5 minutes)

In a food processor, combine the soy sauce, vinegar, white onion, olive oil, green onions, thyme, habanero peppers, brown sugar, nutmeg, allspice, and cloves. Blend until a smooth jerk seasoning is formed. (1 minute)

Shape a large sheet of heavy-duty aluminum foil into a bowl. Add the shrimp and pour enough jerk seasoning over them to thoroughly coat. (2 minutes)

Place the foil bowl directly on the preheated grill. Seal the top of the foil, leaving a small opening for steam to escape. Grill the shrimp until they turn pink and are cooked through, stirring occasionally to ensure even cooking. (10 minutes)

Transfer the grilled shrimp to a serving bowl. (1 minute)

In a small saucepan, heat the remaining jerk sauce over medium heat until it simmers gently. (3 minutes)

Spoon the heated sauce generously over the grilled shrimp and serve immediately.

Adjust the number of habanero peppers to your preferred level of spiciness. For a milder flavor, remove the seeds and membranes from the peppers before blending.
For best results, marinate the shrimp in the jerk seasoning for at least 30 minutes, or up to 2 hours, in the refrigerator before grilling. This will allow the flavors to fully penetrate the shrimp.
Serve with rice and peas, grilled vegetables, or a fresh mango salsa for a complete and satisfying meal.
