Bake in the preheated oven until the potatoes are tender and the top is golden brown and bubbly, about 1 hour and 15 minutes. A knife inserted into the center should meet no resistance. (75 minutes)

For an extra layer of flavor, consider adding a pinch of nutmeg to the cream mixture.
If you don't have an immersion blender, you can finely chop the green chiles instead of pureeing them.
For a cheesier version, sprinkle grated Gruyere or sharp cheddar cheese over the top during the last 15 minutes of baking.
