Preheat the oven to 350 degrees F (175 degrees C). Arrange baguette slices in the bottom of a casserole dish. (5 minutes)

Beat eggs well in a bowl. Add onions, tomatoes, mushrooms, garlic, and ginger in a bowl. Sprinkle 2 tablespoons of Cheddar cheese on top and mix until well combined. Add sage, salt, and pepper. Pour egg mixture over the baguette slices and sprinkle with bacon bits. (10 minutes)

Bake in the preheated oven for 17 minutes. Sprinkle with remaining Cheddar and bake until fully melted, about 5 more minutes. Serve hot. (22 minutes)

For an extra layer of flavor, try sautéing the onions, mushrooms, and garlic in a little olive oil before adding them to the egg mixture.
Feel free to substitute other vegetables based on your preferences and what you have on hand. Bell peppers, zucchini, or spinach would all be delicious additions.
If you don't have bacon bits, you can use crumbled cooked bacon or diced ham.
This casserole can be assembled ahead of time and refrigerated overnight. Just add a few extra minutes to the baking time.
