Einkorn flour can absorb more liquid than regular flour, so if your batter seems too thick, add a tablespoon or two more of buttermilk until it reaches your desired consistency.
Feel free to add mix-ins to the batter, such as blueberries, chocolate chips, chopped nuts, or a sprinkle of nutmeg.
These pancakes freeze well! Let them cool completely, then stack them in a freezer-safe bag or container with parchment paper between each pancake to prevent sticking. Reheat in the toaster, microwave, or oven.
