Follow The Directions

01

Step

In a medium glass or ceramic bowl, whisk together the yogurt, crushed garlic, ground cumin, ground turmeric, freshly grated ginger, ground black pepper, chile flakes, and ground cinnamon until well combined. (5 minutes)

02

Step

Add the cubed chicken to the yogurt mixture, ensuring each piece is thoroughly coated. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 4 hours, or preferably overnight, to allow the flavors to fully infuse the chicken. (5 minutes)

03

Step

Preheat an outdoor grill to medium heat (about 350-400°F or 175-200°C). Lightly oil the grill grate to prevent sticking. (10 minutes)

04

Step

Remove the marinated chicken from the refrigerator. Thread the chicken cubes onto the soaked metal skewers, leaving a small space between each piece to ensure even cooking. (10 minutes)

05

Step

Place the skewers on the preheated grill and cook, turning occasionally, until the chicken is cooked through and the juices run clear when pierced with a fork. This should take approximately 12-15 minutes, depending on the thickness of the chicken cubes and the heat of the grill. An instant-read thermometer inserted into the center of a kebab should register at least 165°F (74°C).

06

Step

Remove the cooked chicken tikka kebabs from the grill and let them rest for a few minutes before serving. Serve hot with a sprinkle of fresh cilantro, chopped red onion, and tomato.

For best results, use full-fat yogurt for a richer marinade.
Soaking the skewers in water prevents them from burning on the grill.
If you don't have an outdoor grill, you can cook the kebabs in a grill pan on the stovetop or bake them in a preheated oven at 400°F (200°C) for 20-25 minutes.
Feel free to adjust the amount of chile flakes to suit your preferred level of spiciness.
