Let the mixture rest for 1 to 2 minutes, allowing the flour to fully absorb the milk and form a soft dough. The dough will continue to firm up as it sits. (1-2 minutes)

Divide the dough into 12 equal portions. (1 minute)

Gently form each portion into a ball, then flatten between your palms into 3 1/2- to 4-inch arepa patties, about 1/3-inch thick. Ensure the edges are smooth and even.

Heat a thin layer of vegetable oil in a large nonstick skillet over medium heat. (2 minutes)

Fry 3 to 4 arepas at a time, being careful not to overcrowd the pan. Cook until lightly golden brown, about 3 minutes per side.

Remove the arepas from the skillet and set aside to drain on a wire rack or paper towels.

Slice each arepa in half crosswise and stuff generously with shredded chicken, sliced Monterey Jack cheese, and slices of fresh avocado.

For a sweeter arepa, add an additional tablespoon of honey or a tablespoon of sugar to the dough.
Arepas are best enjoyed immediately after cooking. However, they can be stored in the refrigerator for up to 2 days. Reheat in a skillet or microwave before serving.
Feel free to experiment with different fillings. Black beans, shredded beef, or even scrambled eggs make delicious additions.
If you don't have pre-cooked arepas flour, you can use masa harina, but the texture will be slightly different. For best results, use arepas flour.
